When you take photos and videos using the built-in Camera app, or other photography apps, they're stored in the Photos app, where anyone that has access to your device can see them, or other apps can access them.
Off the Record stores its photo and video galleries in a separate vault, which can only be unlocked with a passcode that you set. Your personal photos/videos are secure, and are out of the public eye.
